The Beauty of Leftovers: Corned Beef Boxties

Very little goes to waste at our house. So, when push comes to shove, there is always a wealth of great stuff in the freezer. And leftovers can prove to be the best sort of inspiration.

This weekend, we had a few slices of corned beef to play around with. So, we decided it was high time for a bit of peasant food -- boxties (stuffed potato pancakes). What's better than a delicious potato pancake stuffed to the hilt with all sorts of good stuff and topped with cheese sauce? I can't think of much!

Plus it's easy. According to sage folk advice, the boxty should be a pretty standard part of our repertoire: Boxty on the griddle, boxty on the pan; if you can't make boxty, you'll never get a man.

  2. Stuffing potato pancakes is a great idea. My husband would go nuts. He loves them. Granted, I have to admit I'm less than skilled at the potato pancake trick. My husband will never get his cooking Bubbe back in me. (That's what he gets for marrying a gentile.) Still, I do constantly pursue recipes in hope of finding one I won't mess up. You have given me hope!

  3. wow they look amazing! here in ireland, of course we have them - even for sale in the supermarket, but mostly just eat them for breakfast, small toast size potato farls. They are gorgeous with a fried egg on top! This post has given me a lot of inspiration now to start bringing them into dinner time too, where I presume they began! Thanks for that as I probably just took the 'boxty cake' for granted!

  4. Lisa - I'll have to keep them in mind for breakfast. I can just envision them soaking up a bit of that egg yolk...

    We love boxties... and they've actually become an odd sort of staple around here.

    Am not sure I've mastered the potato pancake (so I'm not exactly a Bubbe myself) -- but this recipe offers a "flexible" cake (important for folding) that works well for stuffing.
